Copycat Crumbl Sugar Cookies

Ingredients for dough:
- 1/2 cup butter, softened
- 1/4 cup oil
- 1/2 cup granulated sugar
- 2 tbsp powdered sugar
- 1 egg, room temperature
- 1/2 tsp vanilla extract
- 2 1/3 cup flour
- 1/4 tsp cream of tartar
- 1/4 tsp salt
- 1 tsp baking powder
Ingredients for frosting:
- 1/2 cup butter, softened
- 2 cup powdered sugar
- 2 tbsp heavy cream
- 1 1/4 tsp vanilla extract

Let’s do it:
- Cream the butter, oil, sugar, and powdered sugar in a mixing bowl
- Add the egg and vanilla extract to the mixture and mix until combined
- Add the flour, salt, cream of tartar and baking powder and mix until combined.
- Use a large cookie scoop (¼ cup), scoop out 9-10 equally sized cookie balls, place on the prepared baking sheet then using your hand flatten to about ½ inch in thickness
- Refrigerate dough for at least 20 minutes
- Preheat oven to 350°F
- Bake for 9-10 minutes then cool on the baking sheet for 20 minutes before transferring to a wire rack fully before frosting
- Frost and decorate!

Frosted Pumpkin Cookies

Ingredients:
- 2 1/4 cup of flour (+ 1 tbsp for high altitude)
- 1 tsp corn starch
- 3/4 tsp baking powder (+ extra pinch for high altitude)
- 3/4 tsp baking soda
- 3/4 tsp salt
- 1 tsp cinnamon (+ a few more shakes)
- 1 tsp pumpkin pie spice (+ a few more shakes)
- 1 tsp of vanilla extract
- 1 egg & 1 yolk
- 1/2 cup of softened butter
- 1 cup of dark brown sugar
- 1/4 cup of sugar
- 1/4 cup of olive oil
- 1 1/4 cup of pumpkin puree
Frosting:
- 1/2 cup of softened butter
- 2 cups powdered sugar
- 2 tbsp heavy cream
- 1 1/4 tsp vanilla extract

Let’s do it!
- Preheat your oven to 350°F
- Mix together your dry ingredients in a small bowl; flour, cornstarch, baking powder, baking soda, salt, cinnamon, all spice, and pumpkin pie spice.
- In another bowl, cream together your dark brown sugar, sugar, and butter until creamy. Add the eggs, pumpkin puree, vanilla extract and oil, mix until combined.
- Mix your dry into the wet ingredients.
- Bake for 15-20min at 350°F
- Let cool completely
- Then swirl on your frosting and add optional topping. I did fall sprinkles🍂

Strawberry Crunch Cookies

Ingredients for cookies:
- 1 box strawberry cake mix
- 2 eggs
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 1 tablespoon of flour for high-altitude
Ingredients for crunch:
- 1/2 package graham crackers
- Freeze-dried strawberries
- 3 Tsp melted unsalted butter
Ingredients for frosting:
- 1/2 cup softened butter
- 1.5 tsp vanilla extract
- 2 cups powdered sugar
- 1.5 tablespoons of milk

Let’s do it!!
- Add cake mix, eggs, oil and vanilla to a large bowl. Mix until fully combined.
- Chill for at least 30 minutes
- Preheat the oven to 330°F (high-altitude) or 350°F for “normal” altitude😂
- Scoop the cookies onto the greased baking sheet
- Bake for 11-13 minutes, then let cool for a few minutes.
- Add the graham crackers, some freeze-dried strawberries, and the melted butter to a food processor. (I do not have a food processor, so I put them in a ziplock bag and went to town with a rolling pin💪)
- Dip the tops of the cookies in the icing, then in the strawberry crumb mixture to coat.

Soft Chocolate Chip Cookies

Ingredients:
- 1/2 cups unsalted butter (melted & cooled)
- 1/2 cup brown sugar
- 1/3 cup sugar
- 1 large egg
- 1 tsp vanilla (I did 1/2 tsp)
- 1 1/4 cups all purpose flour (I added an extra tbsp)
- 1/2 tsp baking soda
- 1 tsp salt
- (about) 1 1/2 cups chocolate chips

Lets do it:
- Preheat oven to 350°F
- In a bowl mix flour, baking soda and salt, set aside.
- In a separate bowl add melted butter. Mix in brown and granulated sugar. Whisk for 1-2 minutes until it turns into paste. Crack in the egg and vanilla mix until combine.
- Combine dry ingredients into the wet batter and gently fold in until just combined. Add chocolate chips and mix with spatula. Do not over mix the batter.
- Scoop out cookies onto tray. Bake for 12-15 minutes

Sprinkle Cookies

Ingredients:
- 1 1/2 cups flour (+1 tbsp for altitude)
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 softened butter
- 3/4 cup sugar
- 1 egg
- 1 1/2 tsp vanilla extract
- ~1 cup sprinkles (all always do more🤪)

Let's do it!
- Heat oven to 350°F
- Whisk together flour, baking powder, and salt. Set aside.
- Use a mixer to beat butter until smooth. Pour in the sugar as the butter is mixing, until light and fluffy. Add egg and vanilla extract. Mix until combined. Finally, add in sprinkles.
- Use cookie scoop and place dough on cookie sheet. Here’s when I add some more sprinkles on top.
- Bake for 9-13 minutes

Grammy's
Butter Cookies

Ingredients:
- 1 cup butter, softened
- 1/2 cup sugar
- 1 egg
- 3 tsp vanilla (I did about 2 1/2 to adjust for high-altitude)
- 3 cups of flour (add about a tbsp for high altitude)
- 1/2 tsp baking powder

Frosting:
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1/4 cup milk
- 1 tsp vanilla

Let’s do it!
- Mix in butter, sugar, and egg until well combined.
- Stir in vanilla extract.
- Which flour and baking powder together in separate bowl. Add wet and dry ingredients together.
- Refrigerate dough until chilled thoroughly. At least 30 minutes.
- When dough is completely chilled, roll it out with some flour, cut out shapes, and put them on cookie sheet.
- Bake at 400° for 6-8 minutes
